醃料
2 tsp 紹酒  [Fig 1]
1 tsp 糖 S
2 tsp 生抽 [Fig 2]
1 tbsp 五香粉 [Fig 3]
1 tsp 雞粉 [Fig 4]
2 tbsp 沙薑粉 [Fig 6]
1 tsp 鹽 Salt 
1tbsp 熱水 Hot Water

上皮水
1 tsp  白醋 [Fig 7]

0.5 tsp 梳打粉 [Fig 8] + 1 tsp 水

風乾時間及溫度
氣炸鍋:攝氏80度 / 60 分鐘
光波爐:攝氏80度 / 90 分鐘
焗爐:攝氏100度 / 90 分鐘 (熱風對流模式)

烤焗時間及溫度
氣炸鍋:攝氏200度 / 28 分鐘
光波爐:攝氏210度 / 35 分鐘
焗爐:攝氏240度 / 10 分鐘 (上火烤燒模式)
            攝氏210度 / 30 分鐘 (熱風對流模式)

做法
1 豬肉洗淨抹乾,用剪刀剪開豬皮及白色脂肪層(但不要剪到肉那部分)
2 豬肉底部及四周搽上醃料,豬皮則搽上白醋或梳打粉水(或兩用)
3 豬肉無遮掩放入雪櫃雪6小時
4 用指定溫度及時間將豬皮風乾 (請參考上述風乾時間及溫度)
5 將豬肉用指定溫度及時間焗熟即可(請參考上述烤焗時間及溫度)

注意
每人焗爐熱力及功能不同,請按照機件功能調節
焗爐煮的話,必須要有上火烤燒功能(Broil),沒有的話是做不到的,請參考其他食譜

Seasoning
2 tsp Shaoxing wine [Fig 1]
1 tsp Sugar
2 tsp Light Soy sauce [Fig 2]
1 tbsp Chinese five spices [Fig 3]
1 tsp Chicken powder [Fig 4]
2 tbsp Sand ginger powder [Fig 6]
1 tsp salt
1tbsp Hot Water

Mixture used to brush on the pork skin
1 tsp white vinegar [Fig 7]
or
0.5 tsp baking powder [Fig 8] + 1 tsp water

Tool:
A pair of scissors for cooking [Fig 9]

Air drying time and temperature
Gas fryer: 80 degrees Celsius / 60 minutes
Convection oven: 80 degrees Celsius / 90 minutes
Oven: 100 degrees Celsius / 90 minutes (convection mode)

Cooking time and temperature
Gas fryer: 200 degrees Celsius / 28 minutes
Convection oven: 210 degrees Celsius / 35 minutes
Oven: 240 degrees Celsius / 10 minutes (Broil mode)
            210 degrees Celsius / 30 minutes (convection mode)

Steps:
1 Wash and dry the pork.  Use scissors to cut through pork skin and fat layer (but do not cut through to meat)
2 Rub the seasoning on the bottom and all sides of the pork.  Coat thinly the white vinegar or soda mixture (or use both) on the pork skin
3 Put the pork into the refrigerator uncover  for 6 hours
4 Dry the pork skin with specified temperature (please refer to the air drying time and temperature section above)
5 Cook the pork at the specified temperature (please refer to the cooking time and temperature section above)

Note
Different type or brand of the oven may have different setting.  Please adjust according to the function of your machine
If you cook in the oven, you must have the broil function.  If you don’t have this mode, you cannot use this recipe.
