冰皮月餅 ,中秋節快到,今次分享一下,如何不需要蒸煮粉漿,都可以做到香甜軟糯餅皮,這樣已經減省了20到30分鐘製作時間,今次介紹吉士芝麻和抹茶紅豆口味,兩款顏色亮麗但絕無色素,希望大家喜歡

每款8個餅皮月餅材料




吉士芝麻味:

15g 吉士粉 [fig1]

15g 澄麵 [fig2]

30g 糖霜 [fig3]

25g 糯米粉 [fig4]

25g 粘米粉 [fig5]


餡料

200g 黑芝麻蓉 [fig6]


牛奶料

15g 無鹽牛油溶液 [fig7]

25g 煉奶 [fig8]

130g 暖牛奶


抹茶紅豆口味

吉士芝麻味:

5g 綠茶粉 [fig9]

10g 低筋麵粉

15g 澄麵 [fig2]

30g 糖霜 [fig3]

25g 糯米粉 [fig4]

25g 粘米粉 [fig5]


餡料

200g 紅豆蓉 [fig10]


牛奶料

15g 無鹽牛油溶液 [fig7]

25g 煉奶 [fig8]

130g 暖牛奶


糕粉

2 tbsp 熟糯米粉

做法[詳細步驟請看短片]

Video: 

1 每款月餅材料和牛奶料混合,用1200W 微波爐煮2分鐘

2 麵糰放涼至40度,搓麵糰至光滑

3 麵糰和餡料分配好,麵糰壓平,包入餡料,放入月餅模壓好

4 放入冰箱冷凍至少1小時,吃時室溫回暖至軟身即可

Custard sesame flavor:

15g custard powder [fig1]

15g wheat flour [fig2]

30g icing sugar [fig3]

25g glutinous rice flour [fig4]

25g rice flour [fig5]


filling

200g black sesame filling [fig6]


Milk mixture

15g unsalted butter solution [fig7]

25g condensed milk [fig8]

130g warm milk


Matcha red bean flavor

Custard sesame flavor:

5g green tea powder [fig9]

10g cake flour

15g wheat flour [fig2]

30g icing sugar [fig3]

25g glutinous rice flour [fig4]

25g rice flour [fig5]


filling

200g red bean paste [fig10]


Milk feed

15g unsalted butter solution [fig7]

25g condensed milk [fig8]

130g warm milk


Coating

2 tbsp cooked glutinous rice flour

Video: 

1 Mix the ingredients of each moon cake with the milk mixture.  Cook for 2 minutes in a 1200W microwave

2 Let the dough cool to 40 degrees, knead the dough until smooth

3 The dough and fillings divided evenly.  Flatten the dough and wrap the filling.  Coat the dough with the coating.  Put the dough into  mooncake mold and use mooncake mold to shape it.

4 Put it in the refrigerator and freeze for at least 1 hour. When serve, place in the room temperature to soften it up.
